Limoncello mousse dessert

  • 100ml Místè Limoncello
  • 4 Eggs
  • 80g Sugar
  • 2 Sheets of gelatin
  • 1/2 Organic lemon
  • 250ml Whipped cream
  • 4 tsp Icing sugar
  • 40g Unsalted pistachios (without peel)
How to make it!
  1. Start by squeezing the juice from the half organic lemon into a small container. Set it aside for later.

  2. Separate the egg yolks from the whites, being careful not to get any yolk into the whites. Put the yolks in one bowl and the whites in another.

  3. Whisk the egg yolks with the sugar until the mixture is thick and creamy.

  4. In a clean bowl, beat the egg whites until they form stiff peaks.

  5. In a third bowl, whip the cream with the icing sugar until it holds firm peaks.

  6. Soak the gelatin sheets in a bowl of cold water for about 5 minutes.

  7. While the gelatin is soaking, gently heat the Místè Limoncello and lemon juice in a saucepan.

  8. Once the gelatin has softened, squeeze out the excess water and dissolve it in the warm Místè Limoncello mixture. Let it cool for a few minutes.

  9. Stir the Místè Limoncello mixture into the egg yolk mixture.

  10. Carefully fold in the whipped cream, followed by the beaten egg whites. Be gentle to keep the mixture light and airy.

  11. Divide the mousse into small glasses or bowls and refrigerate for at least 2 hours until set.

  12. While the mousse is setting, finely chop the unsalted pistachios

  13. Just before serving, sprinkle the chopped pistachios over the mousse.
